R U OK? Cupcakes – September Short Projects


Thank you so much to all the lovely, lovely people who read and shared my last post, and to those who got in touch online or in person – I am really touched.

At work on R U OK? day we had a pot luck lunch so we could all get together and connect. We watched some short videos of people’s stories, which were very heartfelt and affecting. You can watch some at: https://www.ruok.org.au/stories, including one from that gorgeous man, Hugh Jackman.

My contribution to the lunch was cupcakes, as you really can’t go past them for being a happiness-inducing food. I used my favourite Women’s Weekly cookbook, Easy Cupcakes by Colour. The recipe is simple, quick and delicious, and the buttercream frosting is to die for. I decided to use royal icing to make some R U OK? decorations for the cupcakes.  For an in-depth look at why someone as paranoid as me is OK with eating royal icing made from eggs, check out my post on gingerbread.

Delicious Vanilla Cupcakes with Buttercream Frosting and Royal Icing Decorations

(adapted from The Australian Women’s Weekly, Easy Cupcakes by Colour, pp 110, 114)



Cupcakes (makes 12)

  • 1 cup self raising flour
  • 90g softened butter
  • 1 tsp vanilla extract
  • 1/2 cup caster sugar
  • 2 eggs
  • 12 patty pans

Buttercream frosting

  • 2 tbs milk
  • 1 and 1/2 cups icing sugar
  • Food colouring (if desired)

Royal icing

  • 1 egg white
  • Several cups icing sugar
  • Food colouring (if desired)


  1. Preheat the oven to 180 degrees Celsius.
  2. Combine all cupcake ingredients and mix well until batter is pale and fluffy.
  3. Spoon about 2 tbs of cupcake batter into each patty pan, and cook for 15-20 minutes, or until cupcakes are golden on top and spring back when pressed.
  4. Meanwhile, prepare the royal icing by beating an egg white with electric beaters until fluffy, then slowing adding icing sugar, while beating, until the icing forms stiff peaks. Add food colouring if desired.
  5. Place the royal icing in a piping bag or ziplock bag with a small hole, and pipe your decorations on to baking paper.
  6. Royal icing takes several hours to dry completely. Alternatively, you can place it in a very slow oven (90-100 degrees Celsius) with the door propped open for around 10-20 minutes. This is a very effective and quick way to dry the decorations.
  7. Prepare the buttercream frosting by beating the softened butter until it is pale, then slowly adding the icing sugar, milk and food colouring.
  8. Once the cupcakes have cooled, pipe on the buttercream frosting. Add the royal icing decorations. Eat and share the cupcakes, and feel your happiness increase.
